I don’t think you are supposed to use the Bluetti AC50(S) while its charging, but it would be very convenient in a couple of weeks if I could. Can I use it on 110volts while charging with my 120 watt solar panel?

Yes you can. The product is designed to do that. Very common to have solar panels connected, charging and use the AC output at the same time.
What they say in the manual is that “it is not recommended to charge and discharge at the same time in order to protect the battery life.” However, if you have to use it then by all means do so. I’m pretty sure it’s meant to keep you from using it as a kind of UPS (uninterruptible power supply). I don’t know how much of the battery life you’ll deplete but I would not refrain from using it for a couple of weeks.
I am very surprised it would say that. Most of these are specifically designed to be charged using solar while powering something else.
