@billybobster - Will, I have Android Auto on my vehicle, it’s limitation is not my Android phone or tablet. It is the vehicle’s limited O.S. as many of my installed Apps don’t project to the car. My thoughts here are, that only Google Apps display. Whereas 3rd party Apps don’t.
This may also be the case with IOS, as Bluetti’s App is a 3rd party App. I have a GPS, survey mapping App, that I would love to operate on my 4x4 display, it’s Android based, works on all my phones and tablets, but not the 4x4.
There are replacement 3rd party vehicle display head units avaialble, but I don’t want to affect my vehicle warranty or spend that kind of money. These replacement units are full Android devices, but also available in IOS. Hope this might help. 
Whether an app appears on CarPlay or AdroidAuto is primarily determined by app developer, who must design it to comply with specific Apple or Google, UI, safety, and functionality guidelines. The app must be installed on the phone, and developers must receive approval from either platform’s store before it appears on the dashboard. I don’t think it’s determined by the hardware.
