Is there a technical article from Bluetti that describes how the wiring should be on the Apex300 and AC300? Should the Apex300 outlets have an unbonded neutral?
You should probably clarify where in the world you are - earthing varies by country so what’s correct in one will be very bad in another.

The Apex 300 is a portable power station that uses a floating ground, which means grounding is not necessary when operating off-grid. If your load does not require grounding, you can skip it.
However, if your appliances requires grounding, you can choose one of the following three methods to ground your system:
1. Grounding via AC Charging Cable
Connect the Apex 300 to a grounded wall outlet using the AC charging cable. This is the simplest method.
2. Grounding via Distribution Panel
For off-grid use, you can ground the Apex 300 by connecting it to a distribution panel through its output and using wiring to establish grounding. To connect it with your home distribution box, please purchase a transfer switch first, it needs manually opened.
3. Grounding for Outdoor Use
When outdoors, you can purchase an neutral grounding plug. Insert the plug into the AC output socket of the Apex 300 for proper grounding.
